The Team

When it

all started

The Grill on the Square's doors were first opened in April 2010 by Charles Dobosz and Adam Smith.
They met whilst working together at Michael Caine's 2 star Michelin restaurant - Abode.
After becoming good friends during their time together in Manchester, they decided to embark on a new exciting venture together, and chose the old Post Office location in Warrington's Cultural Quarter, opposite The Parr Hall as the perfect setting for their new restaurant - The Grill on the Square.

Our

Managers

Alena Pillajova

General Manager

Alena has been in the hospitality industry from a young age, with her parents family business in Slovakia being a country public house. She completed catering school in her home country of Slovakia before spending some time in Ireland. Alena then moved to Manchester where she acquired the position of waitress at Michelin star chef Michael Cain's restaurant - Abode. However it didn't take long for the management team to notice her instinctive ability to deliver exceptional customer service due to her calm and diligent nature. For this reason, Alena was Charles & Adam's first choice for the position of General Manger when they opened their new venture - The Grill on the Square in April 2010.

Ondrej Straka

Assistant General Manager

Ondrej started his career in London where he worked as a waiter in the popular Chinese restaurant Dim T, before moving to Italian chain Zizzi. This was until he was attracted to the north of England, specifically Manchester, where he acquired the position of Chef de Rang at Michelin star chef Michael Cain's restaurant - Abode. This is when he met Charles, the restaurant manager at Abode who noticed that Ondrej had a natural ability to deliver an outstanding level of customer service due to his charismatic personality. The two became great friends, and the rest is history!

Sarah Newall

Restaurant Manager

Sarah's passion for catering motivated her to complete a VRQ Professional Cookery Course at Warrington Collegiate. From here she gained an enthusiasm for all aspects of hospitality which she brought to The Grill on the Square. After starting as a waitress in 2001, she demonstrated a flair and talent for front of house service, which led to her being invited to join our management team.
